Wayne and Lon Inaba are the 3rd generation of their family to farm over 1200 acres of some of the most fertile and productive land in the Yakima Valley. There’s a lot of family pride that goes into everything they grow and you can taste it in the freshness and quality of their green beans. They are leaders in their community and always strive to give more back to the land than they take.

We’re proud to announce that we’ve partnered with the SVPA (Snoqualmie Valley Preservation Alliance) for the Taste of the Valley Farm Dinner and Benefit Auction on July 28th at Goose and Gander Farm in Carnation, Washington.

For starters, we love what the SVPA stands for. They’re all about protecting farms, businesses, and the people of the Snoqualmie River Valley by creating a voice for the community and fighting for land and water issues in the surrounding areas.

And since all that incredible work they do is non-profit, the dinner and benefit auction we’re participating in helps support their upcoming projects in protecting our valley.

The dinner is prepared by regional chefs using local ingredients from our very own Snoqualmie Valley! And there will OBVIOUSLY be some wine and beer pairings – what more could you ask for?

Well ask and you shall receive my friend, because THAT’S NOT ALL! There’ll be an auction, some music and dancing – not to mention you can join us a little earlier to meet our Wildfin chefs along with other local chefs and farmers participating in the event.

All proceeds from this fabulous event go to support the SVPA’s work to protect these precious and stunning working resource lands for generations to come.

Copper River Salmon at WildFin!

Every May, the first salmon of the season return to the rivers and streams of Alaska with the Copper River being the first. 

This year, Copper River Salmon season kicked off in Cordova, Alaska on May 17th.  On May 18th, at 6:30 a.m., the first salmon arrived in Seattle.  As part of the tradition to celebrate the first catch, Alaska Airlines hosted the 9th annual Copper Chef Cook-off at Seattle-Tacoma International Airport.  Three chefs squared off in a competition to create their best salmon dish.  The chefs were given 30 minutes to prepare their creation and present them to the judges who voted on the winner.  Our own Executive Chef, Chris Bryant and his WildFin chef team, took top Honors this year.  

Copper River Salmon are bright silvery salmon with a bright red flesh, a firm texture, and a rich flavor that makes them a very delicious dining experience whose popularity is rapidly growing.  Copper River Salmon is now being featured in all 3 WildFin locations.  Discriminating palates around the nation anticipate Copper River salmon each spring because of its distinctive flavor, its Omega 3 fatty acid content and the fact that it’s sustainably harvested — so you can feel good about eating it.

Eat local with us!

WildFin is continually working to find and procure products that are sustainable, responsibly grown & harvested and, when available, local to the Pacific Northwest.  We work with local farmers in the Snoqualmie, Puyallup and Yakima Valley to source seasonal fruits and vegetables throughout the growing season. Beef from RR Ranch and Snake River Farms is also a part of our menu.

Our menu changes regularly to feature seasonally relevant product selections from a wide list of local suppliers. WildFin also features a wide selection of locally crafted spirits, Washington wines and all of our draft beers are from Northwest Craft Breweries.

Currently we are featuring local rhubarb from Richter Farms found in our Washington Apple-Rhubarb cobbler or a Rhubarb Collins.

WildFin – Leaders in the Smart Catch Program

All 3 locations of Wildfin American Grill are considered “Leaders” in the Smart Catch program and will be featured on the James Beard Foundation’s website. Guests at WildFin now have the opportunity to help make the world’s seafood supply chain more sustainable. As an official James Beard Foundation Smart Catch restaurant, WildFin is  committed to serving seafood fished or farmed through environmentally responsible practices. 

Smart Catch was created by chefs for chefs to give diners an easy way to choose responsible seafood dishes. The program is just one of the James Beard Foundation’s Impact Programs, which showcases the organization’s commitment to establishing a more sustainable food system through education, advocacy, and thought leadership.

As part of the Smart Catch pilot program, participating Smart Catch restaurants receive menu consultations, staff training materials, access to an online Seafood Calculator, marketing resources, and guidance in working with their suppliers so they can make smart seafood choices. Smart Catch’s sustainability criteria are powered by Monterey Bay Aquarium’s Seafood Watch Program and NOAA Fish Stock Sustainability Index. The criteria are based on the health and abundance of fish and seafood stocks, the impacts of commercial fishing and harvesting on habitats and ecosystems, the degree of bycatch, and the effectiveness of fishery management systems.

Smart Catch is the James Beard Foundation’s sustainable seafood pilot program created by chefs for chefs with the purpose of increasing the sustainability of the seafood supply chain. The program provides support to chefs and gives consumers a simple way to identify and support restaurants that serve seafood fished or farmed in environmentally responsible ways.

WildFin and the Village Theatre – A great partnership

We love being able to support local groups in our community and we love Issaquah’s Village Theater.  Our customers always boast about the quality of the performances at the theatre and with its close proximity to our restaurant it seemed logical to partner with them.  

Some Background on the Village Theater

Based in Issaquah, WA, Village Theatre is a leading producer of musical theatre in the Pacific Northwest. They have been producing award winning theater since 1979 and boast over over 20,000 subscribers. Through its Village Originals program, Village Theatre is nationally recognized for its contribution to the development of new musicals, having launched over 160 new works to date. Village Theatre also takes pride in nurturing tomorrow’s audiences through its youth education programs, Pied Piper and KIDSTAGE, serving over 57,000 young people, families, and schools annually.

Our Partnership with the Village Theater

In partnership with the Village Theatre, we will be participating in 5 Ladies Night events as well as donating cookies to the Season Preview in June and providing appetizers at the Village Originals Festival of New Musicals Opening Night party in August. 

Additionally, season ticket holders get a voucher for a free dessert when they purchase an entrée at our restaurant.
